Antibacterial features of strains of lactic acid bacteria species of Lactobacillus brevis isolated from spontaneous dairy products used in the territory of the Azerbaijan Republic

Background. Developing in natural environment, lactic acid bacteria, enter into complex relationships with each other and with other microorganisms. One feature that is manifested in the activity of microbial cultures is antagonism. Methods. In this regard, anti-bacterial features have been studied of strains AB 97s, DE 51, DE 52, BL 1, BL 3 of species of lactic acid bacteria Lactobacillus brevis isolated on the territory of the Republic of Azerbaijan from dairy products , prepared on the basis of the spontaneous ferment. As a test-crop of opportunistic pathigens strains of Bacillus antracoides TU-1, Staphylococcus aureus TU-4 and TU-73, Pseudomonas aeruginosa TU-3, Escherichia coli TU-2 and TU-101 have been selected. Results. Strain DE 51 of species of Lactobacillus brevis, compared with other strains showed high antibacterial activity against the test-culture of Escherichia coli TU-2, a zone of lysis was 17 mm. Strain DE 52 of species of Lactobacillus brevis showed high antibacterial activity against the test-culture of Escherichia coli TU-2, a strain of DE 51 to the test-cultures of Escherichia coli TU-101 and Staphylococcus aureus TU-73.
